Not really popular in France and rarely harvested by beekeepers, bee bread is one of the most important foods in the colony, along with honey. Taken from the pistils of the flowers, the pollen is transported by the worker bees into the hive. It is stored in comb cells, mixed with the bee's own fluids and nectar and produced by making successive layers of compact pollen and honey. Once the cell is filled, the mixture ferments naturally within the hive, transforming pollen into a super-food highly renowned for its energy and nutritional properties.
